| 1 | box | couscous | |
| 2 | cups | chicken broth | canned or fresh |
| 2 | small | zucchini | zuchinni/courgettes |
| handfull | of | cherry tomatoes | sliced |
| 1 | can | soup, minestrone | |
| garlic | olive | vegetable oil |
Bring the stock to a boil in a saucepan.
Add the couscous, stir.
Cover. Turn off heat.
Saute garlic in olive oil in a frying pan.
Add zucchini/courgette,sauté for 2-3 minutes.
Add sliced tomatoes. Blend.
Add minestrone, heat through.
Place couscous in a bowl, add vegetables.
Add left over meat, if desired (leftover buffalo chicken wings, sliced, is especially good.)

I have had Bacalo a la Vizcaina many times. It was served in Cuba, my birthplace, usually at lunch time. I have had it in Spain, also, and prefered the Cuban version (familiarity?) This recipe reads very well and I am excited to have found it. Can hardly wait to try it.


Quick, easy and tasty. Why order out for chinese when it's so easy to make at home. Low in fat only 223 calories per serving with great flavor. If you are quick you can have it ready in only 10 minutes, 15 minutes at the most!
