Ingredients

1 1/2 teaspoons dijon mustard
1 teaspoon lemon juice fresh
1/4 teaspoon salt or to taste
2 each pork chops centre-cut, 1/2 inch thick
2 tablespoons seasoned dry bread crumbs
1 x black pepper to taste

Directions

In a small bowl whisk together the mustard, the lemon juice, the salt, and the pepper to taste, arrange the pork chops on a broiler pan lightly brushed with oil, and brush the tops with half the mustard mixture.

Broil the chops under a preheated broiler about 4 inches from the heat for 5 minutes, turn them, and brush the tops with the remaining mustard mixture.

Broil the chops for 5 minutes, sprinkle the tops with the bread crumbs, and broil the chops for 1 minute, or until the chops are golden brown.

Black Bean Chili

Very hearty and flavorful. The goat cheese complements the chili nicely. I took the advice of the previous reviewer and let it simmer for a couple hours after I mixed everything together. Also, I accidentally bought 2 cans of diced tomatoes instead of crushed, but it was still good, and the red chunks made it pretty :-)
