Ingredients

4 cups carrots grated
3 tablespoons lemon juice fresh
3 tablespoons vegetable oil
1/2 teaspoon coriander ground
1/4 teaspoon salt
2 teaspoons mint fresh, chopped
1 tablespoon parsley leaves fresh, chopped
1 teaspoon maple syrup

Directions

Mix all ingredients together and chill at least one hour before serving.

Chambord Cheesecake

I made this cheesecake with a couple of alterations - I used crushed teddy grahams for the crust and didn't add sugar to it. For the filling I added more creamcheese and cut down the sugar a bit. It turned out VERY well
