Ingredients

1 cup cottage cheese creamed and small-curd type
1 cup sour cream dairy
1 tablespoon prepared mustard
1 tablespoon sugar
1 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons parsley leaves fresh and chopped
2 pounds new potatoes cooked, peeled and diced
2 cups ham fully cooked and cubed
1/2 cup scallions, spring or green onions sliced
1/2 cup celery finely chopped
2 large eggs hard cooked and chopped
1 x lettuce leaves
1 x paprika

Directions

Combine the cottage cheese, sour cream, mustard, sugar, salt and pepper, and parsley in a salad bowl.

Add the potatoes, ham, green onions, celery and eggs.

Toss to mix well.

Cover and refrigerate for several hours or until well chilled.

To serve: Arrange the salad on a bed of lettuce and sprinkle with paprika.

Patti's Jambalaya

I cut back a little on the Cayenne (others may want to double up). I also added 2 large garlic cloves, chopped fine. I used medium-sized frozen shrimp (yeah, I know, lol) but took the tails off and cut them in half for more bites to the spoonful! WOW!! 5 stars!
