Ingredients

1 cup lentils, green pre-cooked
1 cup lentils, red pre-cooked
1/2 cup celery finely chopped
1 cup green beans steamed, finely cut
1/4 cup parsley leaves fresh
dressing
1 tablespoon prepared mustard mild
1 x salt and black pepper to taste
1 dash lemon juice
1/2 cup salad dressing, italian, low-fat reduced fat
1 each tomato cut into, wedges
1/4 cup chives finely chopped
1 each lettuce leaves small head, cut into wedges

Directions

In a salad bowl, mix cooked lentils, celery, green beans, and parsley.

Combine dressing ingredients in a small bowl.

Toss lentil mixture with dressing and serve on shredded lettuce.

Garnish with tomato wedges and chives.

Serve with crusty whole wheat bread.
