Ingredients

1 cup cranberries fresh, chopped
1/2 cup pears peeled, chopped
2 tablespoons honey
1 tablespoon currants
1/4 teaspoon pumpkin pie spice
3 tablespoons cranberry juice cocktail
2 tablespoons red wine vinegar
2 teaspoons lemon juice
15 ounces brie cheese round, fully ripened

Directions

Combine first 8 ingredients in a heavy saucepan; bring mix to a boil over medium-high heat.

Cover, reduce heat, and simmer 30 minutes, stirring frequently.

Uncover and cook an additional 5 minutes or until mix is thickened, stirring frequently.

Cool mix to room temperature.

Cut circle in top rind of cheese, leaving an 1/4 inch border of rind.

Carefully remove center circle of rind from cheese, leaving border intact.

Place Brie on an ovenproof serving platter.

Spread cranberry mix over top.

Bake at 350 degrees F for 12-15 minutes or until cheese is bubbly.

Serve immediately with melba rounds or sliced apples and pears.

Cajun Chicken Pasta

This is the best dish ever! I added a few (about 10 slices) of jalepeno peppers to the chicken/butter/cajun seasoning mixture to give it a little kick, I ate the whole batch myself over a weekend, can't wait to make it for sharing :)
