| 3 | large | green tomato | before they begin to ripen red |
| 3 | large | tomatoes | red, ripe |
| 1 | medium | red onion | |
| 3 | tablespoons | basil | fresh, chopped |
| Dressing | |||
| 1 | large | garlic clove | finely chopped |
| 1/2 | teaspoon | salt | |
| 1/8 | teaspoon | black pepper | freshly ground |
| 2 | tablespoons | lemon juice | |
| 3 | tablespoons | wine vinegar | |
| 1/2 | cup | olive oil | |
| 1/2 | teaspoon | cumin | ground |
Cube green and red tomatoes.
Cut onion into thin slices and separate into rings.
Combine tomatoes and onions in a salad bowl with the chopped basil.
Combine the dressing ingredients, mixing well.
Add dressing to salad and toss.
Let set about 30 minutes to blend flavors.
Delicious with BBQ!
