| 3 | ounce package | gelatin | lime flavored |
| 1 | cup | water | hot |
| 1/2 | cup | water | cold |
| 1 | teaspoon | lemon juice | |
| 1 | teaspoon | lemon zest | grated |
| 1 | teaspoon | onion | grated |
| 1/2 | teaspoon | salt | |
| 1 | medium | cucumber | peeled and chopped |
| 1/3 | cup | green olives | onion-stuffed |
Dissolve gelatin in hot water.
Add cold water, lemon juice, lemon rind, onion, and salt.
Chill until slighlty thickened.
Fold in cucumber and olives.
Pour into a 1-quart mold and chill until firm.

YUM!! Tweeked the recipe a bit....when simmering the cream and aspargus also added minced shallot and a few red chili flakes.
