Ingredients

Salad
3 cups salad greens mixed
1 each carrot chopped
1 each cucumber &
1 each tomato chopped
1 each scallions, spring or green onions chopped
1/4 cup mint fresh, chopped, optional
Sesamepeanut dressing
1 tablespoon sesame seeds
2 each garlic cloves crushed
1 teaspoon hot chili peppers crushed
1/4 cup rice brown syrup
2 tablespoons lime juice
3 tablespoons soy sauce, tamari
2 tablespoons water
1/4 cup peanuts roasted, chopped

Directions

SALAD: Tear greens into bite sized pieces.

Toss all salad ingredients and arrange on a serving platter.

DRESSING: Dry roast the sesame seeds in a small frying pan over medium heat, stirring often until golden brown, about 2 to 4 minutes.

Set aside to cool.

Whisk together the garlic, pepper flakes, syrup, lime juice, tamari and water.

Pour dressing over the salad. Garnish with sesame seeds and peanuts and serve at room temperature.
