Ingredients

7 each potatoes
1 teaspoon tarragon chopped
1/4 cup onion chopped
1/2 cup white wine dry
2 tablespoons shallots chopped
1/2 cup olive oil
1/2 teaspoon garlic chopped
2 tablespoons wine vinegar
1/4 cup parsley leaves chopped
1 x black pepper freshly ground
1/4 teaspoon red pepper flakes

Directions

1. Rinse and drain the potatoes but do not peel them. Put them in a large saucepan.

Add cold water to cover and bring to the boil.

Simmer for about 20 minutes, or until tender.

2. Cut the potatoes lenghwise in half. Cut each half into thin slices.

3. Put the potatoes in a bowl and add the remaining ingredients, including pepper.

Stir gently.

French Rabbit Stew

The recipe as I made it was delicious... but after "Add the broth and wine... I had to improvise, when to add the onions, mushrooms and bacon... also I sprinkled the meat with the white flower before browning and added a little paprika and some more flower with a little cream to thicken the sauce when it was cool enough so the cream would not curdle. Served it over fluffy white rice and added baby green beans... delicious!
