| 2 | cups | flour, all-purpose | |
| 4 | tablespoons | cocoa powder | |
| 1 | cup | coffee | cold |
| 1 | teaspoon | vanilla extract | |
| 1 | cup | sugar | |
| 2 | teaspoons | baking soda | |
| 1 | cup | mayonnaise |
Preheat oven to 350 degrees.
Mix all the dry ingredients.
Blend in the coffee, mayonnaise and vanilla.
Grease and flour an 8-inch round cake pan.
Pour in the batter and bake in preheated oven for 45 minutes.
Test to see if it's done by inserting a knife in the middle.
If it comes out clean, that means the cake is done.
Remove from oven and cool on a wire rack.
Slice and serve.

I've made this recipe since I was a kid (I believe that my Mom found it in a Reader's Digest magazine) and everyone has always loved it. I was going to make it again yesterday and couldn't find my copy of the recipe. So, I googled for it and was glad to find it here. The recipe is easy and forgiving in terms of amount of ingredients and cooking time. I usually use 1/2 cup of peanut butter rather than 1/3 cup and I usually cook it for 20 minutes or sometimes a little more. It usually doesn't look very done when it comes up, but that is fine. You want the oatmeal "cookie" base to be a little chewy.


A truly amazing combination of flavors. The dressing is divine, the warm and tart goat cheese combined with the sweetness of apple ring is truly out of this world.
