Ingredients

4 each chicken breasts
1 x salt and black pepper salt & pepper, to taste
1 each artichoke hearts marinated, can/jar
2 cups mushrooms, wild assorted
1/4 cup scallions, spring or green onions chopped
1 cup white wine

Directions

Place chicken in casserole dish, season with salt and pepper. Drain artichokes, reserving marinade. Chop artichokes into quarters and place over chicken. Add mushrooms and scallions. Pour artichoke marinade and white wine over chicken. Bake at 350 for 45 minutes.

Caribbean Christmas Ring

I have been making this every year since the recipe came out in the magazine (2000 I think it was) and I get nothing but rave reviews. Every year my co workers ask me to make this, and I make it for every Christmas employee dinner. It is among the first to vanish.
