| 4 | each | pork | chops, lean, boneless |
| 1/2 | cup | bread crumbs | dry |
| 3 | tablespoons | prepared mustard | dijon |
| 3 | tablespoons | lemon juice | |
| 1 | x | nonstick cooking spray |
Heat oven to 375 degrees. Trim all visble fat from pork chops. Spray a 13x9x2 inch pan with cooking spray. Place bread crumbs in shallow dish. In another swallow dish, combine mustard and lemon juice; blend well. Dip both sides of each pork chop in mustard mixture, then in bread crumbs to coat. Place chops in pan. Bake 30 to 40 minutes until pork is no longer pink, turning halfway through baking.
This is a very quick and easy recipe. Using the lemon juice really is the key as it makes the porks chops moist (not dry) and yummy!

This recipe is to die for! My sister makes it every year for Thanksgiving, and after I told a friend about it, she asked for the recipe. Rather than wait for my sister to reply, I looked it up and here it is! I highly recommend this!

A truly amazing combination of flavors. The dressing is divine, the warm and tart goat cheese combined with the sweetness of apple ring is truly out of this world.
