| 8 | ounces | lasagna noodles | |
| 1 | pound | ground beef | |
| 1 | cup | onion | chopped |
| 1 | clove | garlic | minced |
| 1 | cup | soup, cream of mushroom | |
| 1 | can | mushroom stems | and pieces |
| 1 | pound | spinach | frozen, leaf cut, thawed, squeezed dry |
| 24 | ounces | cottage cheese | |
| 3 | large | eggs | |
| 8 | ounces | cream cheese | with chives |
| 2 3/4 | ounces | french fried onions |
Grease 13 x 9 inch baking dish.
Cook noodles to desired doneness as directed, drain.
In medium skillet, cook, ground beef, onions, and garlic.
Over medium-high heat until beef is browned; drain if needed.
Add soup and mushroooms; mix well.
In large bowl, combine spinach, 2 cups cottage cheese and 2 eggs, mix well.
In another large bowl, combine cooked noodles remaining 1 cup cottage cheese and remaining egg, toss gently.
In greased dish layer half of the noodle mixture, spinach and beef mixture, repeat layering.
Cover with foil. cook 35 - 40 min. at 350 degrees F.
Remove from oven and sprinkle fried onions over top.
Return to oven cook additional 5 minutes.
Let stand 5 minutes before serving.

Made these for a wedding shower I was having. They were a big hit!! I baked them in mini tart pans instead of the larger muffin pans and topped them with a teaspoon of canned cherry pie filling. I also made them in advance and froze them (before putting on the topping). They froze perfectly. Looked very pretty on the plate with the other squares and cookies. Everyone wanted the recipe!
