Ingredients

1 each pie shell (9 inch) 9 inch, baked
2 1/2 cups cream, half and half
4 tablespoons cornstarch
1/3 cup sugar
6 ounces chocolate (semi-sweet)
4 each egg yolks
1 teaspoon vanilla extract
1/4 cup cognac
1 cup heavy whipping cream
2 tablespoons cognac
1 x chocolate shavings

Directions

In a medium saucepan, combine half and half, cornstarch, and sugar.

Stir until well-blended.

Add chocolate and cook over low heat, stirring continuously, until chocolate is melted and mixture comes to a boil.

Stir one cup of hot mixture into yolks, return to pan.

Cook and stir one minute.

Remove from heat and stir in vanilla and cognac.

Pour into prepared crust.

Chill four hours.

Whip cream with two tablespoons cognac until fluffy.

Spread over top of pie.

Garnish with chocolate shavings.
