Chocolate Mint Brownies

Ingredients

1 cup flour, all-purpose
1/2 cup butter or margarine, soften
1/2 teaspoon salt
4 large eggs
1 teaspoon vanilla extract
16 ounces chocolate syrup
1 cup sugar
Filling
2 cups powdered sugar
1/2 cup butter or margarine, soften
1 tablespoon water
1/2 teaspoon mint extract
3 food coloring green
Topping
10 ounces chocolate chips mint
9 tablespoons butter or margarine

Directions

Combine the first seven ingredients in a large mixing bowl; beat at medium speed for 3 minutes.

Pour batter into a greased 13-inch x 9-inch x 2-inch baking pan.

Bake at 350 degrees for 30 minutes (top of brownies will appear wet).

Cool completely. Combine filling ingredients in a medium mixing bowl; beat until creamy. Spread over cooled brownies.

Refrigerate until set.

For topping, melt chocolate chips and butter over low heat in a small saucepan.

Let cool for 30 minutes or until lukewarm, stirring occasionally.

Spread over filling. Chill before cutting. Store in the refrigerator.

This pie is easy to make - the ginger seems to make it special without being overpowering and it's a nice change from apple! I've used different varieties of pears and all work well. Be careful the edges of the pie crust doesn't burn!
