| 1 3/4 | cups | coconut | unsweetened |
| 4 1/4 | cups | rolled oats | or oatmeal |
| 1/4 | pound | butter | |
| 5 | ounces | milk | |
| 2 1/2 | cups | sugar | |
| 1/2 | teaspoon | vanilla extract | |
| 2/3 | cup | cocoa powder | unsweetened |
| 1 | x | salt |
In bowl, mix oats and coconut.
In large pot place butter, milk, sugar, vanilla, a pinch of salt and cocoa.
Mix well and bring to low boil and stir.
Remove from stove and stir in oats and coconut.
With large spoon make cookies on oiled sheet.
Let cool for at least 30 minutes.
These taste great the first day but they do not keep well.
Very rich and yummy, hard to eat just one! mmm mmm mmm!!! I found this recipe calls for a little too much oats so I used a little less to make them real good and sticky!

This is a wonderful cake recipe. Actually this is the first diabetic cake recipe that I could get to achieve the proper cake texture with. This cake is very moist, especially with the raisins in it. I have adapted it to make a chocolate cake using this recipe as a base, adding cocoa. It turned out good as well.
