| 2 | tablespoons | cocoa powder | |
| 1 | teaspoon | baking powder | |
| 1 | teaspoon | baking soda | |
| 1/2 | teaspoon | salt | |
| 1/4 | cup | vegetable oil | |
| 1 | teaspoon | vanilla extract | |
| 1 | tablespoon | vinegar | |
| 1 | cup | water | warm |
| 1/2 | cup | chocolate chips |
Preheat oven to 400 degrees. In a bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. Make a well in the center. dd oil, vanilla, vinegar, and warm water. Stir just until moist. Add hocolate chips. Spoon batter into prepared muffin tin (use cupcake papers), filling 3/4 full. Bake for 15 - 20 minutes.

Yes, this is an easy one to make, which I do almost every week so I have a batch in the fridge. I usually jazz it up a little though with a sprinkle of cumin, tumeric, paprika.. just a little dash of all or one give it abit more flavour.
