Ingredients

3 pounds chicken thighs
1/2 cup vinegar
1/4 cup soy sauce
3 cloves garlic crushed
1/4 teaspoon salt
1/4 teaspoon peppercorns crushed
1 each bay leaf

Directions

If using pork, cut pork into 1 1/2-inch pieces.

In a large sauce pot, combine all ingredients.

Cover and let stand for 1 to 3 hours.

Bring to a boil; lower heat and simmer for 30 minutes.

Uncover and simmer 15 more minutes or until liquid evaporates and chicken or pork is lightly browned.

Marinated Cubed Beef with Lime Sauce

This one was absolutely delicious! It was so good that the person I made it for was surprised I actually did it. I will be making it again tonight to prove to people I CAN cook. :) Lime sauce doesn't really add a lot, but the rest is FANTASTIC!
