Carrot Cake with Cream Cheese Glaze

Ingredients

4 large eggs
3 tablespoons brown sugar packed
4 teaspoons vegetable oil
1 teaspoon vanilla extract
1 1/3 cups milk, skim, (non fat) powder
3/4 cup whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon ground
3 cups carrots grated
1 cup pineapple, canned, crushed drained
1/4 cup raisins, seedless dark

Directions

Spray an 8" tube pan with nonstick cooking spray and set aside.

Combine eggs, sugar, oil, and vanilla; beat well.

With mixer at low speed, beat in milk powder, flour, baking soda, and cinnamon, until throroughly combined.

Stir in remaining ingrediends. Pour into pan and bake 40-45 minutes, until cake tests done.

Cool in pan for 5 minutes.

Remove cake from pan; drizzle with CREAM CHEESE GLAZE.

Struffoli (Honey Balls)

This was a great recipe! My husband is Italian and we have our own family recipe we use during the holiday season, but we decided to try this one and it was terrific! Yes, it is time consuming, but so worth it. Best method for cooking up the balls is definitely the deep fryer; much faster. Enjoy!
