Butter Pecan Banana Cake

Ingredients

1/2 cup banana mashed
1 box cake mix, yellow
1 package pudding mix, instant butter pecan flavored
4 large eggs slightly beaten
1 cup water
1/4 cup vegetable oil
1/2 cup pecans finely chopped

Directions

Combine all ingredients in large mixer bowl.

Blend on low speed until all ingredients are just combined. Then beat on medium speed for four minutes.

Pour into greased and floured 10 inch tube pan.

Bake at 350F for 50 minutes or until cake tester inserted into center comes out clean and cake begins to pull away from sides of the pan.

Cool in pan 15 minutes.

Remove and glaze with a thin confectioners sugar icing if desired.

Josh's Coffee Cake

This is a nice coffee cake, but it's not Hobee's. This seems to be the only version of Hobee's on the web, and it may have been on their flyer (or is that urban legend?), but this is not their signature dish. The crumb is much smoother at the restaurant and there is more topping than this recipe calls for. Additionally, it's made in tall tins, not a standard 8x8 or 9x9, which might contribute to the difference in texture. I would love to find their actual recipe somewhere, but this, unfortunately, doesn't seem to be the one.
