Bulgur Salad with Apples and Grapes

Ingredients

1/2 cup cracked wheat (bulgur)
1/2 cup water boiling
2 tablespoons apple juice
2 tablespoons lemon juice
1/8 teaspoon lemon zest finely grated
1 each celery stalk
1 large apple red, cored and diced
1/2 each carrot grated
1 tablespoon italian parsley minced
1 cup grapes, seedless red

Directions

Place the bulgur, water, apple and lemon juices and lemon rind in a small bowl; cover and allow to soak until the liquid is absorbed, between 30 minutes and 1 hour.

Halve the celery stalk, then cut wider half in two lengthwise.

Cut the celery into thin slices on the diagonal.

Place the bulgur, celery, diced apple, grated carrot, grapes and parsley in a serving bowl and toss until combined.

Chill if desired before serving.

Shrimp and Sea Scallop Stir-Fry

This is OUTSTANDING, but I highly recommend not adding the seafood until the end. Also, this is a ridiculous amount of vegetables; I cooked them in a large electric skillet and cooked them for a while so they would cook down, as also I like my vegetables cooked more than just the 3 minutes that the recipe says. I used white wine instead of sherry. Other than the cooking modifications, this was probably one of the best stir fry recipes I have ever had. Oh and one more thing, I used a lot more seafood than what they said - one pound total for all those veggies? My husband would flip out if I only used a pound....LOL
