| 3/4 | cup | picante sauce | |
| 2 | tablespoons | olive oil | |
| 2 | tablespoons | balsamic vinegar | |
| 1/2 | teaspoon | oregano | crushed |
| 1 | cloves | garlic | peeled and minced |
| 3/4 | pound | roast beef | delli style, 1/4 inch thick, cut into short thin stips |
| 1 | medium | tomato | seeded and diced |
| 1 | medium | cucumber | cut lengthwise into quarters, seeded and thinly sliced |
| 1 | medium | sweet red bell pepper | or green, cut into thin short strips |
| 1 | cup | celery | thinly sliced |
| 1 | cup | red onion | cut into thin strips |
Combine Picante Sauce, oil, vinegar, oregano and garlic; mix well.
Place beef in plastic bag; pour half of Pace Picante Sauce mixture into bag.
Close bag securely; chill at least 1 hour or up to 12 hours.
Just before serving, arrange meat and vegetables on serving platter.
Pass remaining dressing and serve with additional Picante Sauce.

I am delighted to have found this recipe again. My mother always made this Lane Cake at Xmas time back in the 50's and it is undoubtedly the best fruitcake I have ever eaten.
