Ingredients

2 cups flour, unbleached all-purpose
1 teaspoon salt
1 tablespoon cinnamon ground
1 tablespoon cloves ground
3 teaspoons baking powder
3 large eggs
1/2 cup brown sugar
1/2 cup honey
3/4 cup vegetable oil
1/2 cup pineapple juice or orange or apple
1 cup carrots grated
1 cup bananas mashed
1 cup walnuts chopped

Directions

Preheat the oven to 350F.

Grease a 9 inch x12 inch baking pan.

In a large bowl sift together the flour, cinnamon, cloves and baking powder.

In a smaller bowl beat together the eggs; add sugar and honey; whisk in the oil and juice.

Mix into the dry ingredients. Stir in the carrots, bananas and walnuts.

Pour mixture into the baking dish.

Bake 40 to 45 minutes or until a toothpick inserted into the center comes out clean.

Cool 50 to 60 minutes.

Serve with vanilla ice cream or yogurt.

Crockpot Little Smokies

This is a hit with adults and children and is a great appetizer! I use the apple jelly instead and 1/2 cup of regular mustard instead of the bottle of chili. If you're in a hurry and need it quickly, melt jelly and mustard on stovetop or in microwave and then add little smokies, heat and serve. Wa-la! Easy and great.
