| 1 | cup | whole wheat flour | sifted |
| 1 | cup | flour, all-purpose | sifted |
| 1 | teaspoon | baking powder | |
| 1 | teaspoon | baking soda | |
| 1/4 | teaspoon | salt | optional |
| 1 | cup | banana | ripe, mashed |
| 1/2 | cup | honey | |
| 1/2 | cup | sugar | granulated |
| 1 | teaspoon | lemon juice | |
| 1/2 | cup | canola oil | |
| 1/4 | cup | liqueur | banana flavor |
| 2 | teaspoons | vanilla extract | |
| 1/4 | cup | milk, skim | |
| 6 | large | egg white | at room temperature |
| 1/2 | teaspoon | cream of tartar |
Preheat oven to 350 degrees F.
Grease and flour a 12 cup tube pan that has a removable bottom.
Sift together both flours, baking powder, baking soda, and salt into a large bowl.
Mash the bananas in a medium-size bowl.
Beat in the honey, sugar, lemon juice, vegetable oil, banana liqueur, and vanilla until well mixed.
Stir the bowl of liquid ingredients into the bowl of dry ingredients.
Beat in the milk for about 1 minutes.
In another bowl combine the egg whites and cream of tartar.
Beat the egg whites with clean dry beaters until stiff but not dry.
Fold half of the egg whites at a time into the batter.
Pour batter into prepared pan.
Bake in a preheated oven for 50 minutes or until cake tester comes out clean.
Let cool and remove cake from pan.
