Baker's Holiday Trifle

My husband and I have made this recipe at Christmas, and in the summer for years. It is very light and delicious and always a big hit. It is time consuming to make, but well worth the work.

Ingredients

1 package pudding mix, instant vanilla
3 cups milk
6 squares white chocolate coarsely chopped
500 ml whipped topping, prepared thawed
1/2 each pound cake frozen, thawed
1/4 cup liqueur or orange juice, triple sec, grand marnier, cointreau or other orange flavor
2 1/2 cups strawberries sliced and sweetened fresh
5 squares white chocolate grated
6 each strawberries whole for garnish
1 square white chocolate melted and cooled

Directions

Prepare pudding according to package directions with milk. Remove from heat; stir in chopped chocolate until melted and smooth. Cover with plastic wrap. Chill. Fold in 1 cup (250mL) whipped topping. Cut cake into small cubes and drizzle with liqueur.

In the bottom of a deep glass bowl, layer half the cake cubes, half the berries, half the pudding and half the grated chocolate. Repeat layers, ending with chocolate. Top with remaining whipped topping. Garnish with berries. Drizzle melted chocolate over top.

Pumpkin & Cream Cheese Rollups

I made this for my family and it immediately disappeared. Absolutely yummy it would be a great item to take to a bazaar or bring a dish dinner. You'll really stand out with this one. On the downside, I sprinkled confectioner's suger on the top and it "melted into" the cake when left overnight, so put the sugar on at the very last moment if you want it to look fresh. It didn't change the way the cake tasted, though.
