| 3 | pounds | red snapper, whole fish | or bass |
| 1 | clove | garlic | chopped fine |
| 1 | x | salt and black pepper | to taste |
| 1 | x | italian cheese | |
| 1 | can | tomatoes | |
| 1 1/2 | cups | bread crumbs | |
| 1/4 | cup | cheese | grated |
| 1 | x | mint leaves | |
| 1 | tablespoon | vegetable oil | |
| 1 | x | onion slices | |
| 3 | slices | lemon |
Mix bread crumbs, grated cheese and 3 finely chopped mint leaves (optional); stuff fish, close and fasten with toothpick(s).
Grease baking pan with tablespoon of oil and place fish it it, slit fish on upturned side and in each slit, place 1 small pc. cheese, 1 small slice on onion and 1 mint leaf.
Pour tomatoes over fish and arrange 3 thin slices of lemon on top.
Bake at 350 F. for 1 hr. basting regularly.
Cover during last 15 minutes of cooking.

This is really yummy. I used chicken broth instead of water, added sauted onions and mushrooms. I also added dried basil and chili peppers. I would add about .5 cup of liquid after it is done cooking, usually I add V8 or tomatoe juice. I also use whole wheat macaroni.
