Apple Walnut Cake with Lemon Butter Frosting

Ingredients

4 cups apples peeled, chopped
2 cups sugar
2 large eggs slightly beaten
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups flour, all-purpose
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup walnuts chopped
Lemon butter frosting
4 tablespoons butter
3 cups powdered sugar
2 tablespoons lemon juice
2 tablespoons water

Directions

Stir together eggs, oil and vanilla.

Sift flour, baking soda, cinnamon, sugar and salt.

Blend in egg mixture.

Fold in apples and walnuts, mixing well.

Pour batter into greased and floured 13 x 9 baking pan.

Bake at 350 degrees F for 60 minutes or until done.

Cool and frost with Lemon Butter Frosting.

Frosting: In bowl combine butter, sugar, lemon juice and enough water for spreading consistency; beat well.

Walnut-Onion Herb Bread

I made this recipe into buns instead of baking in another dish. They turned out awesome, lots of onion flavor and a bit of crunchiness from the walnuts. See the photo of the buns just before I took them out of the oven.
