| 6 | large | eggs | |
| 1 1/2 | cup | milk | |
| 1 | cup | flour, all-purpose | |
| 3 | tablespoons | sugar | |
| 1 | teaspoon | vanilla extract | |
| 1/2 | teaspoon | salt | |
| 1/4 | teaspoon | cinnamon | ground |
| 1/2 | cup | butter | or margarine |
| 2 | each | apples | peeled, thinly sliced |
| 2-3 | tablespoons | brown sugar | firmly packed |
Preheat oven to 425. In a blender or large bowl, mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended. (If using an electric mixer, batter will remain slightly lumpy.)
In the oven, melt butter in a 12 inch fluted porcelain quiche dish or a 13x9 inch baking dish. Add apple slices and return to oven until butter sizzles. Do not let it brown. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar.

This past Thanksgiving, I went to the annual holiday dinner my whole family attends. Everything seemed to be the same, aunt and uncles were sharing stories,...
Tried this Jan. 21/01: excellent. A nice fudgy texture. I baked it in a 9" x 13" pan and it came out quite like a snacking cake. I ran out of skim milk powder, so I didn't put any in it and it was just great. The family voted it as a keeper!

Quick, easy and tasty. Why order out for chinese when it's so easy to make at home. Low in fat only 223 calories per serving with great flavor. If you are quick you can have it ready in only 10 minutes, 15 minutes at the most!
