Ingredients

2 pounds pork boneless
1 tablespoon vegetable oil
1 each carrot chopped in small chunks
2 each celery stalks, chopped
3 tablespoons tapioca quick-cooking
1/4 cup wine white
1 teaspoon beef bouillon granules
1/4 teaspoon salt
1/4 teaspoon cinnamon ground
6 ounces apple juice frozen concentrate, thawed but not diluted

Directions

Trim any fat from pork. Cut in half, if necessary, to fit into crockpot. Place carrots, and celery into bottom of crockpot, sprayed with nonstick spray. Sprinkle tapioca over top. Add apple juice concentrate combined with other ingredients. Cover, cook on Low for 10-12 hours or on high for 5 to 6 hours.

I love this recipe. I have used it as the base for pita sandwiches, and with grilled veggies in a panini with two to three types of cheeses. Put a bunch of green leaf lettuce and tomato and cucumber, and mmmmmmm!!!! Five stars
