Apple Chunk Cake

Ingredients

4 cups apples sliced, unpeeled
2 cups sugar
2 teaspoons cinnamon
1/2 cup vegetable oil
2 large eggs
2 cups flour, all-purpose
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup nuts chopped
Frosting
1 pound powdered sugar
2 small packages cream cheese softened
1 x milk for desired consistency

Directions

Mix all ingredients in bowl.

Bake in 13 x 9 pan at 350 degrees F, 35-40 minutes.

Spray pan with Pam or grease it.

Dust cool cake with powdered sugar, or frost with cream cheese frosting.

This cake is best if baked one day ahead.

You can peel and slice your apples and freeze them to use later in apple crisp, apple pie, and apple chunk cake .

When freezing for crisp or pie I line the pan with plastic wrap then fill with sliced apples (heap them up).

After they're frozen remove from pan and wrap for the freezer.

Apple French Toast Strata

This was very good, and easy to make. Everyone at work loved it when I brought it to our potluck. I would suggest soaking the top layer of bread cubes in the egg mixture before putting them on top of the other layers, otherwise it's hard to get all of them covered. I might cut down a little on the cream cheese, too. It was a little rich. Otherwise, it was wonderful!
