Ingredients

2 large eggs
2 cups sugar
1 large pineapple crushed
2 cups flour, all-purpose
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup walnuts chopped
Frosting
12 ounces whipped topping, prepared
1 small instant pudding mix, vanilla
1 large pineapple crushed

Directions

Beat the eggs and sugar together.

Add the rest of the ingredients.

Using a greased and floured 9x13-inch pan, bake at 350 degrees for 30 minutes, or until done.

FROSTING (TOPPING) Mix all ingredients together.

Blend together, and frost well-cooled cake.

Great recreation of the incredible Rubio's Fish Taco. Most people get this wrong, but not this one. The CORN tortilla is vital to the flavor. Get them as fresh and thick as possible. Another vital element is the hot sauce. It's very easy to make and will kick up the flavor a bunch.
